The I.O. Shen Scimitar was designed to perform several jobs without the need to change knives. The European angle to the first 13cm of the knife allows for small/medium bone work (for example poultry & lamb). The Japanese angle in the last 17cm of the blade is the precision meat slicer. An I.O. Shen twist on the traditional Butcher’s steak knife.

Knife care and sharpening: Dishwasher cleaning is not recommended and will invalidate the lifetime guarantee.

The dual angle to the scimitar should be observed when sharpening. If using a whetstone, complete one angle before moving on to the next.
Other recommended methods of sharpening include a diamond sharpening file from I.O.Shen, a butcher’s steel (for the European edge only) or the KE198, KE3000 or KE280 knife sharpening machines (for the Japanese edge only).

Note: Only the European edge should be used for small and medium bone chopping. The Japanese edge is at risk if it comes into contact with hard objects. Please take care when using.
